So, hear this lasagna is that top feel good food, right? Soft layers of noodles, sauce & cheese all hot & good.
But if you eat vegan, you may ask, “Can it be rich & good with no milk or meat?” Good news: YES, it can. Vegan lasagna with white sauce?
It’s like a warm hug on a plate with no milk goods. & really, it’s one of my big loves when I need a full & good meal that feels full of taste.
I made this the last night on a gut feel after a long day & boom food was set. Plus, it’s a bit sneaky good with all the good greens in it.
No one knew I had a lot of spinach & zucchini in it! If you think plant based is dull, this meal will make you think again.
Why I Love This Vegan Lasagna with white sauce
I’m not joking, this lasagna is a treat each time I have it. The smooth white sauce is top soft, rich & has just the right cheese feel (all with yeast). & the greens?
They’re cooked just soft with a sweet hint from the carrots & a small bite from the red & green stuff. The zucchini adds a soft fresh taste & the spinach?
It’s like a hidden good with good stuff but you don’t see it.
I was not sure of the white sauce the first time as vegan sauces can be hit or miss. But this one was good soft & not heavy, & no weird taste.
It uses easy stuff like nut milk & fake butter that I near always have. This dish takes me back to those slow Sunday times when you want a good meal but also want to feel good on what you’re eating.
Stuff You’ll Need For This Vegan Lasagna with white sauce

Lasagna noodles (or no gluten)
Olive oil (gives it a good taste)
Onion (cut small)
Garlic (crushed don’t miss this, it’s the taste core!)
Zucchini (cut in thin rounds)
Carrot (grated for a nice feel & sweet)
Red & green mix (cut up use any you like)
Fresh spinach (a lot trust me)
Chopped tomatoes (canned is fine)
Nut milk (or your liked veg milk soy or oat too)
vegan butter (for that smooth base in the sauce)
Flour (all use or no gluten to make the sauce thick)
Yeast (this is the “cheesy” good taste boost)
Dry herbs (oregano, basil, or your top herb mix)
Salt & spice (taste like you mean it!)
Why These Stuff Rock
Zucchini: Full of fiber & keeps your gut happy & adds a mild taste.
Carrots: Full of good A & C best for bright skin & raises your body’s guard, so you stay good.
Spinach: Iron & K are great, good for bone health & power. It brings in big good stuff but does not show.
Nut Milk: Milk free, low fat & high in E best for a smooth sauce that won’t fill you too much.
Yeast: Veg’s best kept say no more. It adds B, protein, fiber & that umami “cheesy” feel we all want.
Let’s Make This Vegan Lasagna Magic
Step 1: Get Your Noodles Ready
If you use good lasagna noodles, cook them to hard and soft as per the box tips, then drain & set aside. No cook noodles? Just have enough sauce to make them soft while you bake.
Step 2: Fry Your Greens
Heat some olive oil in a big pan. Put in cut onion & garlic first cook till they smell good & turn somewhat gold (you’ll smell the garlic here).
Put in zucchini, grated carrot, cut red & green mix & fresh spinach. Mix it up & let it cook till all is soft but still full of color.
Add your chopped tomatoes, put in your herbs, salt & spice, & let it heat soft. This green mix is the heart of the lasagna, so don’t rush it!

Step 3: Make the White Sauce
Here’s the time for big win.
Melt your fake butter in a pot over mid heat. Add in the flour & whisk non stop to make a soft mix this is the start of your soft sauce.
Slowly pour in the nut milk while whisking to keep no lumps. Keep mixing & heating till it gets thick & soft, about 5 7 mins.
Mix in a few spoons of yeast, salt & spice to taste. You want it smooth but not too thick it’ll get more thick in the oven.

Step 4: Layer It Up
Turn on your oven to 375°F (190°C). Get a bake pan & start to layer.
Put a bit of white sauce at the base to not stick.
Then a layer of noodles, then the green mix & more white sauce. Keep going till you use up all stuff, end with a big layer of white sauce on top.

Step 5: Bake It Till Golden
Cover the lasagna with a lid & bake for 25 mins. Then, take off the lid & bake for another 10 15 mins to get a golden top. You’ll know it’s done when it’s hot & the edges start to go crisp.

Step 6: Let It Rest (Sort Of)
Once out of the oven, let the lasagna cool for at least 5 mins before you cut. This step is key for clean slices & letting the tastes mix in.

How I Love to Serve This Lasagna

Cut it into big squares and serve it up with fresh herbs like basil or parsley.
Some days I toss in garlic bread (vegan, sure), or keep it light with a green salad in a sharp vinaigrette.
And hey, if you’re up for it, a glass of dry white wine or bubbly water works to tame all the rich taste.
Leftovers? Oh Yes!
This lasagna is a champ for leftovers. Keep any extra in a tight box in the fridge for up to 3 4 days. Just make sure it’s cool before sealing so it stays crisp.
Got too much? No sweat this freezes well. Wrap it tight in plastic wrap & foil, and stash it in the freezer for up to 2 3 months.
To eat it once more, bake at 350°F (175°C) for about 25 30 minutes or until hot. Quick fix: microwave one serving for about 2 3 minutes on high. Boom, you save dinner once more!
Pro Tips To Ace This Vegan Lasagna
Layer Like a Pro: Spread your veggies & sauce nice & even so each bite’s rich in taste. Don’t cut back on the sauce it keeps it creamy & moist.
No Boil Noodles Are Cool: If you skip the boil, be sure your sauce is extra rich so those noodles soften right during bake.
Veggie Remix: Go on, swap or add mushrooms, eggplant, or artichokes this lasagna lets you mix it up.
Make Ahead, Stress Less: Fix it the night before & bake it the next day. Great for busy days when you need dinner set to go.
Cheese, Please? Want that extra cheesy feel? Toss in some vegan shredded cheese or cashew cheese between layers before baking. It shifts the game!
