This curry feels like a warm hug on a plate. But it’s also light & fun so you might dance in your kitchen. I love it ’cause it’s snug yet fresh, a rare mix!

The mix of thick coconut milk & hot red curry paste?

Boom big taste rush that hits just right. It’s full of bright veggies that look & feel nice. Trust me, it’s my top pick for a rich but good for you meal.

It’s vegan, too & full of good stuff.

Listen up: I’ve tried loads of curry recipes some cool some okay some bad (don’t ask about the chili mix up… yikes). But this Thai Veg Red Curry?

It’s spot on each time. The milk is rich but not heavy & the paste gives a neat kick.

It’s a very bendy recipe too. I throw in any veg I have like corn broccoli or peppers and it tastes great.

If you’re vegan or just like more veg you’ll love this curry. & it’s easy to make fast even when you’re busy but want a yummy meal.

Here’s what you toss in this great pot:

1 spoon of coconut oil (for a fun twist)

1 onion chopped (for a sweet base)

2 bits of garlic minced (the more the merrier)

1 inch of ginger minced (adds a zing)

2 spoons red curry paste (the core of the dish)

1 can (400 ml) coconut milk (keep it full fat)

1 cup veg broth (makes it richer)

2 spoons soy sauce or tamari (salty kick)

1 spoon maple syrup (just sweet enough)

1 cup baby corn (fun crunch)

1 cup broccoli bits (green & good)

1 carrot thin slices (sweet & crisp)

1 zucchini sliced (soaks up flavor)

1 bell pepper sliced (adds color & C)

1/2 cup peas (sweet pops)

Juice of 1 lime (bright & zesty)

Fresh cilantro chopped (for taste & fresh punch)

Coconut Milk Thick rich & good fats for you.

Carrots Full of Vitamin A your eyes will thank you.

Zucchini Low cal but high in good stuff.

Bell Peppers They’re like C bombs tops for defense.

Ginger Sorts your belly & eases sore bits. Smells great too.

Maple Syrup Just right sweet & also has good bits.

Get your veg ready

First chop up your carrots peppers zucchini & cut the broccoli and baby corn small. Don’t fuss on the sizes this dish is chill and the veg cook down well.

Sauté the base

Warm up the coconut oil in a big pot or deep pan on medium heat. Add the onion and cook ’til soft. Your kitchen will smell wow.

Now toss in your garlic and ginger. Get ready for the ace smells. Stir for a bit but don’t burn the garlic (happens to the best of us).

In goes the curry paste

Now add the red curry paste. Here’s where the fun starts. Cook it so it wakes up and fills your kitchen.

Pour in the liquids

Time to put in the coconut milk veg broth soy sauce and maple syrup. Mix well then let it simmer softly. It’ll get lush & thick yum!

Drop all those cut veg into the pot. Mix & simmer for about 10 15 mins. You want soft but crisp veg no mush.

Tune it up

Add lime juice don’t skip it! It lifts the curry and evens out the milk’s richness.

Taste and tweak if needed. Add more spice or salt. I like a mild heat but go wild if you like.

Garnish and dish up

Top it with some fresh cilantro. Serve it hot with rice or your chosen noodles. This dish will win over anyone great for dinner or packed lunches.

I love to serve this curry on soft steamed rice. It soaks up the creamy hot sauce so well. But noodles are good too if you want a change.

Want more kick?

Add some crisp tofu on the side or warm roti bread to scoop the sauce. And hey if you feel bold toss some chili flakes or fresh chilies on top for that more heat.

This curry does not last long at my place but if you have leftovers put them in a tight box in the fridge.

They will be good for 3 days.

When you warm it you may find the curry got thick (no stress!).

Just add a bit of veg broth or coconut milk to thin it.

And yes you can freeze it too just unthaw overnight & warm it soft. It freezes like a dream.

Want it hot? Put more red curry paste or fresh chilies. Go for it!

For more cream Mix in a spoon or two of peanut butter or almond butter after you cook. Trust me it’s great.

Change your veggies Eggplant spinach mushrooms snap peas pick what you like or have.

Add protein Crisp pan fried tofu or tempeh makes this curry a full meal. Just add it at the end.

Don’t miss the lime juice For real it gives the dish a fresh kick.

Look I know there are so many curry recipes out there but this Thai Veg Red Curry is just right between easy healthy & so good.

It’s great when you want a cozy dish but don’t want to feel too full.

It’s also a fun way to eat your veggies. Plus it’s vegan so it’s good for all at the table.
