Let me tell you, this Spiced Pear and Almond Crepe Stack is one of those desserts that makes you feel way fancier than you actually are.
It looks like something you bought from a French bakery after taking a weekend trip to
Paris or something, but really it is just crepes, sweet pears, and a creamy almond situation stacked on top of each other.
I make it mostly in the fall because pears are perfect then, all juicy and warm tasting, but honestly I could eat it any time.
When the pears hit the pan with the cinnamon and nutmeg my whole kitchen smells like one of those high end fall candles.
Except this version is edible and way better.
The crepes are super thin and soft, the almond filling is creamy with that marzipan kind of nuttiness, and the spiced pears get all tender and sweet without turning into total mush.
Every layer is like cozy autumn in bite form. It is kind of ridiculous how good it is.
INGREDIENTS :

Ingredients for the Crepes (makes about 10)
1 cup all purpose flour
1 cup whole milk
1/2 cup water
2 large eggs
2 tablespoons melted butter
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
For the Spiced Pear Compote
3 ripe pears peeled and diced
1/4 cup brown sugar
2 tablespoons butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1/4 cup water
For the Almond Filling
1 cup almond paste crumbled
1/2 cup cream cheese softened
1/4 cup powdered sugar
2 tablespoons heavy cream
1/2 teaspoon almond extract
Pinch of salt
How I Make It
First thing I do is mix up the crepe batter. I whisk the flour sugar cinnamon and salt in one bowl.

Then in another bowl I mix the milk water eggs melted butter and vanilla.

I pour the wet into the dry and whisk till it is smooth. Sometimes I just toss it all in a blender and give it a quick spin because I am lazy like that.

I let it sit for a few minutes while I handle the pears.
For the compote I melt butter in a saucepan then dump in the diced pears brown sugar cinnamon nutmeg lemon juice and water.
I stir it and let it simmer till the pears get soft and glossy. It smells so good I usually burn my tongue trying to taste it too early. I pull it off the heat so it cools down a bit.

Next is the almond filling. I mash together the almond paste cream cheese powdered sugar heavy cream almond extract and salt.
I use a hand mixer if I feel like being clean or just a fork if I do not feel like washing extra dishes. If it is too thick I splash in a tiny bit more cream.
Now comes the crepe frying marathon. I heat up a non stick pan and grease it very lightly.
I pour in a little batter swirl it quick so it spreads thin and cook it till the edges lift. Flip.
Cook the other side. Stack. Repeat. I usually ruin the first one every time so do not stress if that happens.
Once everything is ready I grab a platter and start layering. Crepe almond filling pear compote.

If I feel like showing off I sprinkle a little cinnamon or powdered sugar.

Sometimes I chill it for 20 minutes if I want it to slice cleaner but honestly most times I cannot wait so I just slice it like cake and eat it while it is still slightly warm.
How I Serve It

I cut it into wedges like a cake and plop it on plates. Sometimes I drizzle honey or add whipped cream if I am feeling extra.
It goes insanely well with coffee or chai. If I am serving guests I just throw the whole stack in the middle of the table and let people slice it themselves.
They always think I spent hours on it which makes me laugh.
Leftovers
If there are any leftovers which is rare I wrap the whole thing in plastic or tuck slices into containers. It keeps in the fridge for a couple days.
I microwave it for like 15 seconds or heat it in a low oven. If the pears or filling thicken up I stir in a tiny splash of cream to loosen them.
Little Tips I Learned the Hard Way
Pears should be ripe but still firm or they turn into pear soup.
If the batter looks too thick I just add a splash of water.
Crepes should be thin like paper.
Do not glob on too much filling or it will slide around like a slippery lasagna.
Sometimes I sprinkle chopped almonds between layers if I want a crunch moment.
