It honestly feels like drinking a fall campfire under a harvest moon.

Ingredients

2 ripe Fuyu persimmons, about 1 cup when pureed
2 cups water
1/4 cup honey
4 fresh sage leaves
1/2 teaspoon smoked tea like Lapsang Souchong or 1/4 teaspoon liquid smoke
1 cinnamon stick
1/4 teaspoon ground nutmeg
2 tablespoons fresh lemon juice
2 ounces mezcal optional, if I want an adult version
1/2 teaspoon vanilla extract
Fresh sage leaves or persimmon slices for garnish
Why I Love These Ingredients
Fuyu persimmons are firm and sweet with a honey apricot vibe, perfect for fall drinks. Honey adds a gentle floral sweetness that balances the smoke and herbs.

Making the Sip
First, I wash my persimmons under cold water.

Then I strain it through a fine mesh strainer into a pitcher or bowl, pressing the solids gently to get every bit of flavor.

I return the strained liquid to the saucepan and stir in lemon juice, vanilla, and mezcal if I am using it.

Finally, I pour it into mugs or heat safe glasses. I usually garnish each with a fresh sage leaf or a thin persimmon slice.
