1/2 cup brown sugar

1/4 cup water
1 tablespoon fresh ginger, grated

1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup dried cranberries, optional

4 large slices challah bread, about 1/2 inch thick

Making the Persimmon Chutney
I peel and dice the persimmons into small cubes.

I let it simmer over medium heat, stirring now and then, until the persimmons soften and it thickens into a jam-like consistency, usually 15 to 20 minutes.

Preparing the Challah
I slice the challah into 1/2 inch thick pieces and spread softened butter on both sides.

If I don’t want to stand over the stove, I throw them on a baking sheet in a 350°F oven for 5 to 7 minutes. Either way, they come out buttery and perfect.

Assembling the Sandwiches
On one slice of toasted challah, I spread a thin layer of cream cheese if I’m using it.
Then I layer 2 or 3 slices of smoked turkey, followed by a generous spoonful of the persimmon chutney.

I pile on a little arugula for crunch and sometimes drizzle a tiny bit of honey for sweetness.

I like them warm, right after assembling so the challah is still crisp.
I sometimes serve them with roasted sweet potato fries or a simple fall salad with apples and walnuts.
Drinks? Sparkling apple cider or a light rosé is my go to.
I like to cut the sandwiches diagonally and serve them on a wooden board with extra chutney on the side because presentation matters even if I’m eating solo.
Leftovers

I keep leftover chutney in the fridge for up to a week.
It’s great on other sandwiches or with cheese. Smoked turkey lasts 3 to 4 days, also in the fridge.
Challah I keep at room temp for a day or freeze for up to a month. When I reheat, I warm the turkey in a 350°F oven for about 5 minutes and toast fresh challah slices.
I always add fresh arugula when I reassemble so it stays crisp.

I always use Fuyu persimmons because they are firm and easy to dice.
I usually make the chutney a day ahead so the flavors have time to mingle.
If I can’t find smoked turkey, roasted turkey or smoked chicken works fine. If I don’t have challah, brioche or a soft white bread is a good substitute.
I adjust the brown sugar in the chutney depending on how tart I want it.
