What is up with steak sauce huh You see those bottles at the store okay for quick use but then you try a smooth shiny made at home red wine sauce and you think Wow so this is how rich folks eat.

I first made this on a wild idea because I had some wine left from last night (and no I wasn’t about to toss it I’m not that bad).

One fast mix a bit of cooking and bam I had this thick soft sauce that made my regular steak taste like it was from a fancy place in town.

And the cool part You don’t need to be a pro chef to make it. If you can cut a shallot without too much crying and keep stirring your sauce now and then you’re set.

Why I Love This Sauce So Much Here’s why I love this red wine sauce as it’s easy but looks so fancy.

It makes a normal steak feel like a $45 dish at a big time spot (and you’ll still tip big because it’s that tasty).

The taste Just perfect savory from the stock tart and deep from the wine with a hint of sweet to match it all. And that butter finish Too good.

It’s like smooth silk on your steak.

Trust me when you bring out a steak with this shiny sauce folks will think you trained in Paris. (Little secret you didn’t But let them think so.)

You might have some of these in your kitchen already. But just in case:

1 cup red wine (dry type’s best like Cabernet or Merlot)

1 cup beef stock (go for low sodium)

2 tablespoons unsalted butter

1 small shallot chopped fine

2 garlic cloves chopped

1 teaspoon fresh thyme leaves (or ¼ teaspoon dried thyme)

1 teaspoon sugar (up to you to cut the tartness)

Salt and fresh black pepper to your taste

Red Wine Adds deep taste and a rich grown up hint that makes this sauce a winner (Plus makes your steak soft if you let it sit in it).

Beef Stock The strong meaty part that fills out the sauce.

Unsalted Butter Creamy smooth and rich it gives that big time finish.

Shallot A bit like an onion but sweeter and adds class to the sauce.

Garlic Sure Garlic lifts everything up.

Fresh Thyme Earthy and smells great gives a French feel to the sauce.

Sugar Your call but sometimes it helps with the wine’s tartness.

Salt & Pepper Must haves to bring it all alive.

Cook the Garlic and Shallot

Use a mid size pan and melt 1 tablespoon of butter over middle heat. Add chopped shallot and garlic.

Let them cook for 2 3 minutes until they’re soft and smell amazing (Be careful garlic burns quick).

Add Wine
Put in your cup of red wine and watch it bubble up. That’s the taste getting strong in there. Let it cook for about 5 minutes so it gets thick and rich.

Add Stock and Herbs
Mix in the beef stock thyme and sugar (if your wine’s a bit tart). Let this cook for 10 12 minutes stirring sometimes until it shrinks by about half.

Finish with Butter
Take it off the stove and stir in the last tablespoon of butter. This step brings that pretty shiny look. Taste it. Add more salt pepper or sugar if needed.

Pour it thick over your steak or set it up in little side dishes if you want to be extra.

    Fridge Let it cool down put it in a closed box and it’ll be good for about 3 days.

    Warm It Up
    Gentle and slow on the stove. If it’s too thick add a bit of water or stock.

    Freeze
    Sure thing For up to 2 months. Thaw in the fridge before warming again.

    Pick a Drinkable Wine Cooking wine tastes bad and salty. If you wouldn’t drink it don’t use it.

    Butter Is Key
    That final mix of butter makes it silky. Don’t skip it.

    Taste as You Make It
    Wines differ you might need a bit more sugar or stock to make it just right.

    Strain for a Smooth Look
    If you want that smooth restaurant feel strain it before you serve.

    Change the Herbs
    Thyme is classic but rosemary or a bay leaf can switch it up.

    The first time I made this I walked away “just for a second” and the wine almost vanished (Had to stop the smoke alarm). Stay close this sauce cooks fast.

    I once used a really sweet wine nope Way too sugary. Stick to dry reds.

    Oh and if you have friends over Maybe skip the white top when you’re cooking with red wine. I found out the hard way.
