Okay, be real… when did you last eat a scone that made you halt & go, “Oh wow”?
Not the dry kind you just nibble on as it’s by your latte, but one that’s soft, full of juicy fruit, & just sweet enough to make you want more.
That’s why I love these Raspberry Scones with White Chocolate.
You make them on a slow Sat morn when the kitchen smells of coffee & your hair’s a mess… or when mates text, “We’re stopping by!” & you need to seem put together.
Why I Adore This Mix First raspberries & white chocolate?
Dream mix. The raspberries give a tangy hit, & the white chocolate adds creamy, melty sweetness.
Second these scones are light & flaky, not too dense.
They’re crisp on the edges but soft inside. The best part? No need to be a star baker to make them.
And, aren’t they cute?
Bright pink berries look out from pale, buttery dough. They seem like they’re from a neat little shop where they know your order. But here, you’re the one in charge.
No need to dress up. Win win.
What You Need

2 cups flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup cold unsalted butter, cubed
1/2 cup white chocolate chips
1 cup fresh raspberries
3/4 cup heavy cream
1 big egg
1 tsp vanilla
Why They Work So Well
Flour keeps it soft. Sugar adds to the browning & feel.
Cold butter creates layers. Raspberries add a kick & keep it moist.
White chocolate is mild & fits well with the berries.
How to Make Raspberry Scones with White Chocolate

Mix dry stuff In a big bowl, mix flour, sugar, baking powder, & salt.

Mix wet parts In another bowl, mix the heavy cream, egg, & vanilla till smooth.

Mix all Pour wet mix into dry mix & stir till just mixed. No over stirring!
Shape it Turn it out on a floured spot, shape to a 1 inch thick circle, & cut into 8 parts.

Final touches Put them on your tray, brush with extra cream, & (if you like) sprinkle with sugar.

Bake & smell Bake for 18 22 min. Let your kitchen fill with a lovely smell.

Cool a bit Let them cool a bit before you eat. Or not, and just dig in.

How to Serve Hot from the oven Peak scone life.

With clotted cream For a touch of class. With more melted white chocolate For a real treat. On a holiday table They look bright & merry.
Keeping Leftovers Keep them in a box at room temp for 2 days.
Freezer: Wrap each one in cling film & foil, freeze for up to 1 month.
Reheat: 350°F for 5 7 mins. Almost as good as fresh.
My Best Tips for Scone Making
Cold butter is a must. If your butter gets soft while you work, put the dough in the fridge for 10 mins before you bake.
Don’t mix too much. The dough should look rough that’s how you get flaky bits.
Use frozen raspberries too. Just don’t thaw them first; or else, you’ll have mush.
Go wild. Use blueberries, strawberries, chopped nuts mix it up.
Final Words
Look these Raspberry Scones with White Chocolate are a bit of a trap. You think you’re just having one with your coffee, then you’re taking “just one more” for the road.
They’re great for a party, simple for a weekday, & snug for those mornings when you want a treat… because why not?
So go on bake a batch. And when your kitchen is full of the scent of buttery raspberries & chocolate, you’ll see why I love to remake them time & again.
