I have to say, these Purple Starlight Whimsy Crepes are basically little pieces of holiday magic.

The soft purple color reminds me of a starry winter sky and the blueberry lavender filling is both sweet and super soothing.

I first made these last Christmas and everyone at brunch kept staring at them like I had cast a spell or something.

Making them is actually kinda fun and creative, and they always wow my guests with that vibrant color and the delicate floral-fruity taste.

Ingredients for the Crepe Batter

1 cup all-purpose flour
1 cup milk
2 large eggs
2 tablespoons granulated sugar
1 tablespoon melted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
Purple food coloring, about 4 to 5 drops or a mix of red and blue

Ingredients for the Filling

8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup fresh blueberry puree, about 3/4 cup fresh blueberries
1/4 teaspoon culinary lavender extract or 1 teaspoon finely ground dried lavender
1/4 cup heavy cream

Ingredients for the Topping

1 cup whipped cream
1/4 cup fresh blueberries
Edible gold dust or sprinkles, optional for that starry effect

Why I Love These Ingredients

Flour makes the crepe soft and pliable, milk keeps it smooth and creamy.

Eggs give it richness and structure, sugar and vanilla add a gentle sweetness, and butter makes it rich and buttery.

Purple food coloring gives it that dreamy, whimsical vibe.

Cream cheese makes the filling creamy and tangy, blueberry puree adds a fruity punch, and lavender gives it that subtle floral aroma that just smells like winter.

Heavy cream lightens it up, whipped cream is fluffy heaven on top, and the blueberries bring extra color and flavor.

Making the Crepe Batter

I grab a large mixing bowl and whisk together the flour, milk, eggs, sugar, melted butter, vanilla, and salt until smooth.

Sometimes I throw it in a blender if I am lazy or short on time.

Then I add 4 or 5 drops of purple food coloring and stir until the batter turns this gorgeous starry purple.

I cover it and let it chill in the fridge for 10 minutes so the crepes come out extra tender.

Making the Filling

While the batter rests, I blitz the blueberries in a blender to make the puree.

In a medium bowl, I beat the cream cheese with powdered sugar until smooth, then mix in the blueberry puree, lavender, and heavy cream.

I usually sneak a little taste and just sigh because it smells so good and tastes amazing already.

Cooking the Crepes

I heat up my non-stick skillet and lightly grease it with butter.

I pour in about 1/4 cup of batter, swirl it into a thin circle, and cook for a minute or two until the edges lift a little and the bottom is lightly golden.

Flip it for another 30 seconds. I stack them on a plate and usually get about 8 crepes.

Assembling the Crepes

I spread about 2 tablespoons of the filling on a crepe, fold it in half, then in half again to make a triangle, or sometimes I roll it up for fun.

Repeat for all the crepes. Then I top each with a dollop of whipped cream and scatter a few fresh blueberries.

If I am feeling extra whimsical, I sprinkle a little edible gold dust for a starry effect.

Serving These

I serve them warm straight from the skillet so the flavors pop.

They are perfect for holiday breakfasts, dessert, or a festive brunch.

I sometimes pair them with a lavender latte or sparkling blueberry lemonade, and it honestly feels like Christmas magic in a bite.

Leftovers

If I am lucky enough to have leftovers, I store the crepes and filling separately in airtight containers in the fridge for up to 3 days.

I reheat the crepes over low heat in a skillet for about 30 seconds per side to keep them soft. The filling can be enjoyed cold or at room temperature.

I do not recommend freezing them already assembled because the filling can make the crepes soggy, but plain crepes freeze perfectly for up to a month if you layer them with parchment paper.

Let the batter rest for 10 minutes so your crepes are tender and easy to flip.

Add the purple food coloring drop by drop to get the perfect starry shade without messing up the flavor. Use a non-stick skillet so they don’t stick and flipping is easy.

If your batter is thick, a splash of milk thins it for delicate, soft crepes.

I often make the batter and filling a day ahead to save myself stress on busy holiday mornings.
