Okay, be real… when you think “Mini beef wellington recipe,” do you see a chef with a tall white hat in a high end place, yelling “Yes, chef!” as flames leap up from a pan? Me too.
But this small type? You can make it at home. & not just make have fun. Think, wine in hand, tunes on, “look at me I’m a top chef” kind of fun.
I’ll say now the first time I did these, I was set for a mess. I thought, this will look good on the web but bad on my dish. But no I did it right.
Not ‘cause I’m a food pro (hint: I’ve burnt bread), but ‘cause these small Wellingtons are much more simple than they sound.
They’re like small gold beds of puff dough with rich beef in the mid, plus earthy mash of mushrooms (just mushrooms, small onions, garlic, butter, & wait time), salted prosciutto, & a bit of Dijon for zing.
Bake them till the dough is puff & gold & the beef is pink just right.
It’s the type of dish that makes folks say, “Wow… you made this?!” as you just nod & go, “Oh, you know, no big deal.” (While you’re in your head, YES, I DID. LOOK AT MY FOOD MAGIC.)
Why I Love This Dish (And Why You Will Too)
I pick this dish for fun days, love days, or just a cool end to a week when I feel fun.
It’s a big deal. Like, “put down your phone & snap this” type of nice.
The tastes are wild. You get rich, butter like beef, deep mushrooms, salted prosciutto, & crisp dough all in one bit.
It’s for just one. Not slicing a big block, each one gets a small one. Seems close, top, & very “cool guest” like.
You can prep them first. This is key if you have folks over, ‘cause you can get them set & just bake them when you need to.
It’s more easy than it looks. True, there are steps, but all doable. If you can fry meat & wrap a gift, you’re set.
Bits You’ll Need (and Why They Do Stuff)

Beef Tenderloin (Filet Mignon) 4 small cuts, 4 6 oz each
Soft, rich, & cooks fast. This beef is so soft you don’t need a knife.
Mushrooms 1 cup, cut fine
I pick cremini or baby bella they taste deep. Mushrooms are the key wow here.
Shallots 2, cut fine
Soft & not too strong, they keep the mushroom mix just right.
Garlic 2 parts, minced
‘Cause garlic is key. That’s all.
Prosciutto 8 thin cuts
This adds a salt, chewy touch & stops the dough from getting wet. Plus, prosciutto + beef = dream team.
Puff Pastry 1 box, not frozen
Crisp, rich, gold. Store bought is great don’t fuss on home made.
Dijon Mustard 2 tbsp
Adds a zing that checks the rich taste.
Butter 2 tbsp (for mushroom mix)
‘Cause butter lifts all.
Olive Oil 1 tbsp (for cooking beef)
Gets that gold crust on the beef.
Salt & Pepper As you like
Don’t hold back spice is love.
Egg Wash 1 beat egg
For that shop like shine on the pastry.
Let’s Chat About Duxelles for A Bit
“Duxelles” might sound like a moody French art kid, but it’s just a word for deep cut mushrooms cooked with small onions, garlic, butter, salt, & pepper until it’s kind of like a paste.
It’s full mushroom taste deep, earth like, & a bit sweet from the small onions. & it’s the key to make these Wellingtons seem like you trained 10 years in a food school.
Step by Step: How to Make Mini Beef Wellington
Sear the Beef
Season your beef well with salt & pepper. Really, don’t skip it’s a thick cut & needs the taste deep.
Heat olive oil in a pan over mid high heat until hot.
Fry the beef on all sides about 2 3 minutes all. You just want color, not to cook through.
Take it off, let it cool a bit, then coat each bit with Dijon mustard. (This is where the zing starts.)
Tip: Don’t miss the cool warm beef will make your pastry sad.

Make the Mushroom Mix
In the same pan, melt butter.

Put in your fine cut mushrooms, small onions, & garlic.
Cook over a mid fire, stir lots, until most wet is gone. You want this mix thick & dry ish too wet & it’ll make the pastry wet.
Let it cool all the way before use.
(Bonus tip: You can make this up to 3 days ahead. Keep in the cold, with a lid.)
Wrap with Prosciutto
Lay down a cut of clear wrap.
Overlap 2 cuts of prosciutto in the mid.
Lay some mushroom mix over the prosciutto.
Put your beef in the mid, then roll it tight with the clear wrap like you’re making a big bite.
Cool in the cold for about 15 minutes. This helps it keep shape.
Puff Pastry Time
Roll out your puff pastry just enough to go round the beef roll.

Take beef from the cold, unwrap, & set in the mid of the pastry.
Fold up & seal (a bit of water on the sides helps).
Cut any extra dough & press the seams soft so they don’t pop open in the hot.
Brush with egg wash for that gold look.
Bake
Warm your hot box to 400°F (200°C).

Put Wellingtons seam side down on a tray lined with clean paper.
Bake for 25 30 minutes, until gold brown & the beef is about 125°F inside for mid rare.
Rest for 5 minutes before you cut.
How to Serve It

On a Plate: Cut in half to see the layers. Have with mashed potatoes, roasted veggies, or a fresh salad.
With Sauces: Red wine sauce, béarnaise, or mushroom gravy.
As Appetizers: Cut into small bits & use toothpicks at a bash.
Leftovers & Make Ahead Tips

Storage: Wrap tight & keep in the fridge for 2 3 days.
Reheating: Oven only (350°F for 10 15 mins). Microwave makes it sad.
Freezing: Freeze not baked, wrap it tight. Bake from frozen, add 5 more mins.
My Best Tips
Cold Pastry = More Puff. Keep it cold till the last min.
Dry Duxelles = Good Pastry. Wet fill fills wreck the puff.
Don’t cook beef too much. It keeps on cooking in the pastry.
Egg Wash = Great Shine.
