It was so hot the day I had this Mango salad thailand. I could feel the sun’s heat. It was like it hit the ground & shot right into me. I craved a fresh, not dull meal.
The sight of a lot of bright mangoes at the store seemed to shout my name.
I took a few & a cucumber that was so crisp you might snap it, some red onion & bunches of cilantro that brought me back to wet summer days.
By the time I was home, I had my meal plan.
This salad is so bright & full of life. It feels like you should eat it outside on the grass with bare feet. The mango gives a soft, sweet taste.
The cucumber makes it all cool. The lime dressing sparks your taste buds in the best way.
Then there’s the crunch from roasted peanuts & that small kick from chili if you want it. It feels special but looks easy.
It’s so quick to make, even when you’re too worn out to think about dinner.

Each bite has soft mango, crisp cucumber & that just right peanut crunch. The dressing is easy.
It is just fish sauce, lime juice, honey & garlic. But the mix is just right & hugs the food perfect.

Stuff You’ll Need for Mango Salad Thailand

2 ripe mangoes peeled & cut thin
1 cucumber cut into thin sticks
1 small red onion cut fine
A handful of fresh cilantro chopped
A handful of roasted peanuts crushed
One red chili cut thin if you want heat
2 spoons fish sauce
1 spoon lime juice
1 spoon honey
1 clove garlic minced
1 small spoon rice vinegar
A bit of chili flakes if you like more spice
Why These Work Well
Mango has lots of vitamin A & C.
It’s sweet & good for skin & health. Cucumber is light, adds water & is cool, great for hot days. Red onion cuts the sweet of mango & balances the taste.
Cilantro has stuff that’s good for you & lifts the dish. Peanuts give protein & good fats with a satisfying crunch. Fish sauce adds a deep taste with an umami hit.
How to Make It
Get all set so the salad is quick to make. Peel & cut your mango & cucumber, cut the onion, chop the cilantro, crush the peanuts.

If you want chili, cut it now.
Whisk fish sauce, lime juice, honey, garlic, rice vinegar & chili flakes in a small bowl till smooth & shiny.

In a big bowl, mix mango, cucumber, onion & cilantro. Pour the dressing over & stir so it coats all.

Right before you serve, toss on the peanuts so they stay crunchy.

How I Serve It

I often have it alone for lunch, but it’s good next to grilled chicken or fish. It fits with Thai or Asian meals & is great for picnics.
Sometimes I have it with sticky rice to soak up any extra dressing.
Storing Extras If there are leftovers, put them in a sealed box in the fridge. Eat within a couple of days. The peanuts may get less crunchy, but it will still taste great.
Tips to Make It Top Notch

Choose mangoes soft to touch but not mushy for best taste.
Add more chili if you like it hot. Make the dressing in advance & keep it cold.
Add a bit more lime juice if you want it tangy or a touch more honey if you like it sweet.
