Did you ever eat food so good it made you stop & stare? Like “Did I make this?!”

That happened when I made lemon tartlets.

No joke I took them from the oven. The meringue was gold & puffed. It looked like a small cloud on sun rays. I danced in my kitchen (I can’t dance).

My dog thought I was nuts. But was it worth it? Yes.

These small guys are all I want in a sweet. They have tangy lemon that wakes up your mouth. The crust is rich & breaks just right.

The meringue is like a sweet cloud. They fit a big dinner or a chill Tuesday when you need a treat.

Here’s the thing I love when tastes mix just right. Too sweet? Nah. Too sour? No thanks. But just right a bit of zing & sweet rich smooth crisp? Yes that’s it. These tarts have it.

The crust is crisp & gold. It hugs the lemon fill like a rich hug.

The fill? It’s bright zesty smooth. It has real lemon zest (no fake stuff). The meringue wow. It’s soft like marshmallow with crisp tops.

And the best part? They’re tiny. So you can eat two & say “It’s a small sweet.”

When to Make Them (Tip Anytime) I’ve made them for Easter summer & even Christmas. They always work. They’re light but also feel big for the holidays.

They travel well so if you bring treats you’ll be loved.

These are right for those who want “just a bit of sweet.”

For the crust:
1 1/4 cups flour
1/4 cup sugar
1/2 tsp salt
1/2 cup cold cut butter
1 big egg yolk
2 3 tbsp cold water

For the lemon fill:
1/2 cup fresh lemon juice
1 tbsp lemon zest
3/4 cup sugar
3 big egg yolks
1 big egg
2 tbsp cornstarch
A tiny bit of salt
3 tbsp cold cut butter

For the meringue:
3 big egg whites
1/4 tsp cream of tartar
1/2 cup sugar

Flour Gives the crust structure.

Butter Adds taste & makes it flake. Lemon Juice & Zest They’re the sun of the mix.

Eggs Hold it all up & make it silky.

Sugar Calms the tartness & adds sweet.

Cornstarch Thickens the fill.

Cream of Tartar Stops the meringue from falling.

Step 1: Make the crust
Put flour sugar & salt in a food processor.

Add cold butter & pulse until it looks like crumbs.

Add egg yolk then cold water one spoon at a time & pulse until it sticks.

Wrap it chill for 30 mins then roll it out. Press into tart pans & bake at 350°F for 12 15 mins. Let them cool.

Step 2: Cook the lemon fill
In a pot mix lemon juice zest sugar eggs cornstarch & salt.

Cook & whisk. When it thickens remove & stir in butter until it melts. Pour into cool crusts.

Step 3: Whip the meringue
Beat egg whites & cream of tartar until soft peaks.

Add sugar slowly & beat until stiff shiny peaks form.

Put the meringue on your tarts. Bake at 350°F for 5 8 mins until golden.

Add lemon zest on top. Or a mint leaf. Or serve with raspberry sauce. Pair it with coffee tea or even champagne.

Store in an airtight box in the fridge. They stay good for 1 2 days. If you need to crisp the meringue broil on low for 1 2 mins.

Always chill the dough. Brush baked crust with melted chocolate to keep it dry.

Use room temp eggs. If you beat the meringue too much it might look rough.

These lemon meringue tartlets are like small sun bits and once you try one you’ll see why I brag so much.

Instructions

  1. Crust: Mix dry ingredients & butter, pulse with yolk & water. Chill 30 min, roll, bake 12–15 min at 175°C. Cool.
  2. Lemon filling: Cook lemon juice, zest, sugar, eggs, cornstarch, salt until thick, stir in butter, pour into crust.
  3. Meringue: Whip egg whites & cream of tartar, add sugar to stiff peaks, top tarts, bake 5–8 min until golden.
  4. Serving Ideas: Garnish with lemon zest, mint, or raspberry sauce; serve with coffee, tea, or champagne.
  5. Storage: Airtight container in fridge, 1–2 days; crisp meringue under low broil if needed.
