This egg soup has been my calm save on more days than I can count. It is the type of bowl you grab when the sky is dark or you feel a bit worn.
I love that it is quick to make & does not rush me. The steam has that soft smell of garlic & ginger & makes me stop.
It is light yet seems to care for me from the core.
The eggs float in silky strips over warm broth & each spoon is a bit of joy.
Some days I keep it plain with just broth & eggs. Other days I toss in some greens or mushrooms & it turns into more of a meal.
This is the sort of soup that needs no fancy stuff but still tastes like what you’d hope to find at a loved café.
What You Will Need:

4 cups chicken broth or veggie broth
2 big eggs beat till smooth
1 spoon soy sauce
1 small spoon sesame oil
1 clove fresh garlic chop fine
1 small piece fresh ginger about an inch grate fine
1 spoon cornstarch (only if you like thick soup)
2 spoons water (only if using cornstarch)
One forth cup chop scallions for the top
Salt & pepper to taste
Why These Work So Well:
Eggs give protein & a soft feel, making the soup full yet light. Broth, be it chicken or veggie, makes a warm base so you don’t need much spice.
Soy sauce adds depth & that full taste. Sesame oil has a soft nutty smell & healthy fats.
Garlic & ginger add mild heat & a snug feel, quite fresh & soft.
Cornstarch lets the soup get silky & thick without milk or butter.
Scallions add fresh bite & snap just as you taste it.
How Do You Make Egg Soup
Step 1: Whip your eggs till smooth & light. Then set them on the side.

Step 2: Put a pot on the heat & pour in the broth. Add soy sauce sesame oil garlic & ginger. Let it simmer to free the tastes.

Step 3: If you like it thick mix cornstarch with the water till smooth then stir it into the pot. Keep stirring till the broth seems a bit plump & smooth.

Step 4: Slowly pour your eggs into the pot. Stir softly as they hit the hot broth. You will see ribbons of cooked egg.

Step 5: Let the soup simmer for two or three more mins so the eggs are set & tastes mix well.
Step 6: Taste & fix with salt & pepper if needed. Then turn off the heat.

How to Serve:
Pour hot soup into warm bowls & top with chop scallions.
Add a small bowl of rice if you want more.
Or throw in some greens or a slice of crusty bread for more feel.
This soup fits as a start to a main meal but stands well on its own as a light dinner too mainly if you add more greens or tofu.
Keep It Fresh: Let the soup cool at room temp before sealing it in the fridge.
It stays good for two to three days. Warm it slowly on the stove stirring now & then so the eggs stay soft.
If you freeze it it lasts up to two months but the eggs may be a bit soft when thawed.
To warm from frozen heat it gently on the stove till hot all through.
Best Tips for Great Soup:
For a thicker feel add cornstarch slurry slowly & let it cook a bit before adding eggs.
This stops clumps & gives you a smooth end.
For more richness stir in some cream or a bit of coconut milk when warming left overs.
Add greens like spinach bok choy mushrooms or thin cut carrots for more taste & layers.
If you watch your salt use low sodium broth & soy then season at the end to control the taste.
Why This Soup Is a Go To:
Every time I make this soup I think of the first cold night I tried it.
I was out of patience for big meals & the fridge was almost bare.
The smell of garlic & ginger from the pot made me relax even before I sat to eat. The first spoonful was all I needed to feel a bit better. It is simple food but not dull.
It is light but not thin. It is the sort of dish you can make your own without messing it up & I think that’s why it has stayed in my kitchen for so long.
At times I put in soft tofu or use fresh cilantro in place of scallions.
It depends on what I have. At times I add thin slices of chili pepper if I crave some heat. The soup is still mild so the eggs can stand out. That is the charm of this dish.
It goes with any mood or time of year. It still feels like a small gift & it just needs a few mins of my time.
