Alright, these Mummy Wrapped Baklava Rolls might be one of my proudest Halloween creations.

I mean, baklava on its own is already legendary, but once I wrapped them up to look like mummies with white chocolate bandages, people went wild.

They look like something you spent hours on even though they are way easier than they look.

And those little candy eyes peeking through the chocolate cracks, they get everyone every single time.

I put a tray out last year and they were gone before I even set down the serving tongs.

Ingredients

For the baklava rolls

1 package of phyllo dough thawed
1 and a half cups finely chopped nuts walnuts pistachios or almonds
One fourth cup sugar
1 teaspoon cinnamon
Half a cup melted butter

For the honey syrup

Three fourths cup sugar
Three fourths cup water
Half a cup honey
1 tablespoon lemon juice
1 cinnamon stick optional

For the mummy wrapping

8 ounces white chocolate or white chocolate chips
1 teaspoon vegetable oil optional
Candy eyes
Red sprinkles or candy melts if you want gory mummies

What makes these ingredients perfect

Phyllo dough is like magic paper that turns flaky and crispy in the oven. The nut mix gives that classic baklava crunch with cinnamon making it warm and cozy.

Honey syrup soaks into every layer making the rolls sticky and sweet.

White chocolate is the “bandages” that make the spooky moment happen and the candy eyes bring the drama.

If you add the red sprinkles it suddenly turns into crime scene baklava which is hilarious and delicious at the same time.

How I make them

First I crank the oven to 350 and line a tray with parchment. Phyllo dries fast so I keep it covered with a slightly damp towel while I work.

I mix my chopped nuts sugar and cinnamon in a bowl and set it aside.

Then I lay down one sheet of phyllo brush it with butter lay another one on top and brush that one too.

I sprinkle a couple spoonfuls of the nut mix across it then roll it up tight starting from the long edge like I am rolling a cinnamon stick.

I place it seam side down on the baking tray and brush more butter on top. I keep doing that until I use up the phyllo or I get tired which is usually around 12 to 15 rolls.

I bake them for about 20 minutes until they turn golden and crisp. While they cool a little I make the syrup.

I throw the sugar water honey lemon juice and cinnamon stick in a saucepan and let it simmer for about 5 minutes until it looks slightly thick.

I take out the cinnamon stick and pour the syrup over the warm rolls. It sizzles a bit and soaks right in which is the best part.

I let them sit for at least 30 minutes so they get nice and sticky.

Now the fun part. I melt the white chocolate with a little oil so it is smooth.

I pour it into a small plastic bag and snip the tiniest corner then zigzag it all over the rolls like I am wrapping tiny mummies.

I stick two candy eyes on each one. If I am feeling dramatic I drizzle a little red candy on them like fake blood.

I pop the tray in the fridge for 10 minutes so the chocolate sets then bring them back to room temp before serving.

How I serve them

I like to lay them out on a black tray with fake cobwebs and plastic spiders for full effect.

They are perfect for Halloween movie nights parties or just scaring kids into eating nuts. They are messy sticky crunchy and absolutely ridiculous in the best way.

I usually serve them with hot chai or a berry cocktail which feels very vampire chic.

Leftovers

They stay good for like three days on the counter in a container or a week in the fridge.

If I freeze them I do it before adding the chocolate so they do not sweat when thawing. Then I just decorate fresh when needed.

My tips

Work fast with the phyllo because it dries out like tissue paper.

Do not overthink the chocolate drizzle messy makes it look more like real bandages anyway.

Let the kids put the eyes on if you want guaranteed chaos.
