Alright, let me just say it. These Bleeding Heart Red Velvet Cupcakes are hands down my favorite Halloween treat.
They look all cute and innocent on the outside, then you bite into one and boom raspberry blood everywhere.
It is dramatic in the best way. The cake is soft and fluffy, not too sweet, with that classic red velvet flavor that is just a tiny bit cocoa and a whole lot of comfort.
Then you hit that tart raspberry filling and the cream cheese frosting on top ties everything together.
Every time I bring these to a party someone gasps like they just saw a crime scene. That is when I know I nailed it.
INGREDIENTS :

Ingredients for the Cupcakes
1 and a half cups all-purpose flour
1 cup sugar
1 tablespoon cocoa powder
Half a teaspoon baking soda
Half a teaspoon salt
1 egg
Three quarter cup vegetable oil
Half a cup buttermilk
1 tablespoon red food coloring
1 teaspoon vanilla extract
1 teaspoon white vinegar

1 cup raspberries fresh or frozen
Quarter cup sugar
1 tablespoon lemon juice
1 teaspoon cornstarch
1 tablespoon water
Ingredients for the Frosting
8 ounces cream cheese softened
Half a cup butter softened
2 cups powdered sugar
1 teaspoon vanilla extract
Why These Ingredients Work So Well

The flour and sugar give the cake its base and sweetness while the cocoa adds that sneaky chocolate hint that makes red velvet what it is.
Oil keeps it super moist. I swear oil beats butter every time in cupcakes. Buttermilk gives it a tangy kick and makes the texture all soft and tender.
The food coloring is what makes them spooky. I go full bold red. The vinegar sounds weird but trust me it helps the cupcakes rise.
The raspberries make the blood filling tart and juicy. Lemon juice brightens it and cornstarch thickens it so it stays put instead of leaking everywhere.
Cream cheese and butter whipped together is frosting heaven.
Making the Cupcakes
First things first heat the oven to 350°F and line your muffin tin. I mix all my dry stuff in one bowl flour sugar cocoa baking soda and salt.

Then in another bowl I whisk the egg oil buttermilk food coloring vanilla and vinegar until it is smooth.

I pour the wet into the dry and stir until it is just mixed.
Do not keep stirring or they will come out dense instead of fluffy.
I scoop the batter into the liners about two thirds full and bake for around 18 minutes. I poke the middle with a toothpick and if it comes out clean I know they are done.
Let them cool for a bit before moving them to a rack.

Making the Blood Filling
I toss the raspberries sugar and lemon juice into a pan and let it bubble for a few minutes. When it is all soft and juicy I stir in my cornstarch and water mix to thicken it up.

Once it is nice and jammy I strain it so I do not get seeds stuck in my teeth.

Then I chill it so it thickens more.

Making the Frosting
I beat the cream cheese and butter together until they are creamy then add the powdered sugar slowly while mixing.

Once it is all smooth and fluffy I add vanilla and mix again. I put it in a piping bag or honestly sometimes I just use a zip bag and snip the corner.
Assembling the Cupcakes
This is the fun part. I scoop out a little chunk from the middle of each cupcake using a spoon.

I fill the hole with the raspberry blood and let a little drip down the sides so it looks extra creepy.

Then I swirl the frosting on top to seal the crime scene.
If I want to be dramatic I drizzle more raspberry filling on top. I have even added candy eyes once and I am not gonna lie they looked like possessed cupcakes.

Serving Them
I usually throw them on a tray with fake spiderwebs or those plastic skeleton hands from the dollar store.

They look amazing on a Halloween table.
When people bite into them and see the blood they either laugh or scream. Both reactions are perfect.
Leftovers and Storage

Since the frosting has cream cheese I keep them in the fridge after a couple hours.
They stay good for about 3 days but honestly they rarely last past day one.
If I need to prep ahead I bake the cupcakes and make the filling a day early and keep them separate.
I only fill and frost the day I serve them so they look fresh and glossy.
Little Tips

Use gel food coloring if you want a deeper red. Do not overfill the cupcakes with blood unless you want raspberry everywhere.
If your frosting is too soft chill it for a couple minutes before piping.
And if you want extra gore melt some red candy melts and flick them on like blood splatter. It gets messy but it looks amazing.
