I cannot get enough of this Cinnamon Pear and Bourbon Crepe Cake in the fall.

Honestly it feels like a warm hug in dessert form. Sweet juicy pears, cozy cinnamon, and just a splash of bourbon come together in a way that is rich, comforting, and perfect for crisp autumn evenings.

I love how the delicate crepes stack up into this impressive looking cake but it’s not even hard to make.

The bourbon gives it a subtle grown up kick and the creamy mascarpone filling ties everything together.

I usually make it for holiday gatherings or whenever I want to impress friends without going crazy in the kitchen.

This cake is basically layers of thin cinnamon-infused crepes with creamy mascarpone filling and a spiced pear-bourbon compote.

3 ripe but firm pears, peeled and diced (I like Bosc or Anjou)
1/4 cup brown sugar
2 tablespoons unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons bourbon
1 tablespoon lemon juice
1/4 cup water

Mascarpone Filling

1 cup mascarpone cheese, softened
1/2 cup heavy cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Pinch of salt
