I have to tell you about these Gingerbread Reindeer Cupcakes because they are just the cutest little holiday treats.

The cupcakes themselves are moist and spiced, smelling like Christmas as they bake.

Then you top them with creamy vanilla frosting and decorate them as reindeer with pretzel antlers, candy eyes, and a red candy nose.

I love making these around the holidays, especially with kids. Decorating them is half the fun, and honestly, they are a total hit at any party.

The gingerbread spices mixed with sweet frosting is basically Christmas in your mouth.

Ingredients for the Cupcakes

1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp ground ginger
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
½ cup unsalted butter, melted
½ cup brown sugar, packed
¼ cup granulated sugar
2 large eggs
⅓ cup molasses
½ cup buttermilk
1 tsp pure vanilla extract

Ingredients for Frosting and Decoration

1 cup (2 sticks) unsalted butter, softened
3 cups powdered sugar
2 tbsp heavy cream
1 tsp pure vanilla extract
24 small pretzel twists for antlers
24 candy eyes
12 red M&M’s or similar red candies for noses
Mini chocolate chips optional for extra decoration

Why I Love These Ingredients

The flour gives the cupcakes a soft but sturdy base, baking powder and soda help them rise perfectly, and a pinch of salt just makes the spices pop.

The ginger, cinnamon, nutmeg, and cloves make my kitchen smell amazing and warm, and I love that ginger even helps digestion a bit.

The melted butter keeps the cupcakes rich and moist, brown sugar adds that cozy caramel like flavor, and molasses gives them that deep gingerbread taste and dark color.

Buttermilk makes them tender and adds a slight tang, and vanilla warms everything up.

For frosting, the butter makes it creamy, powdered sugar sweet and smooth, and a little heavy cream keeps it soft and spreadable.

The pretzels, candy eyes, and red candies are pure fun, turning these cupcakes into festive reindeer that make everyone smile.

Making the Cupcakes

I start by preheating my oven to 350°F and lining a 12-cup muffin tin with paper liners because I do not want sticky cupcakes later.

Next, I mix the dry ingredients in a medium bowl.

mlds 1

I whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves so everything is even and ready to meet the wet ingredients.

lkd 1

In a separate large bowl, I mix the melted butter with the brown and granulated sugar until smooth.

mlf

Then I add the eggs, molasses, buttermilk, and vanilla, stirring until everything is well combined.

df

I slowly fold the dry ingredients into the wet using a spatula or whisk, careful not to overmix because I want them light and fluffy.

Then I scoop the batter into the muffin tin, filling each about two-thirds full.

gfd

I bake them for 18 to 22 minutes, checking with a toothpick. When it comes out clean, they are ready.

lds

I let them sit in the tin for a few minutes before moving them to a cooling rack. Sometimes I sneak a little lick of the batter because it smells so good.

Making the Frosting

I beat the softened butter for about a minute until creamy, then slowly add the powdered sugar, heavy cream, and vanilla.

mdsfls

I mix until light and fluffy, adjusting with more cream if it feels too thick.

Frosting is the best part because I can really get creative, swirling it or just spreading it with a spatula.

Decorating the Reindeer

This part is so fun. I press two pretzel twists into each cupcake for antlers, then two candy eyes below them and a red M&M for the nose.

mf

If I feel fancy, I use mini chocolate chips for pupils or a tiny mouth. It is kinda like making tiny little reindeer friends.

Serving Ideas

I love arranging them on a festive tray and sprinkling a little powdered sugar on top to look like snow.

They are perfect with hot cocoa, mulled cider, or even a peppermint mocha.

Sometimes I set up a little decorating station for kids with extra pretzels and candies, and it turns into a fun little activity.

Leftovers

If you are lucky enough to have any, they stay fresh in an airtight container at room temp for a couple of days or in the fridge up to five days.

I sometimes freeze unfrosted cupcakes for a few months and frost them later. I like keeping them in a single layer so the reindeer faces don’t get messed up.

My Little Tips

Spray your measuring cup with a bit of cooking spray before pouring molasses in, it makes it so much easier.

Make sure cupcakes are completely cooled before frosting so nothing melts. Check that your spices are fresh, it really makes a difference.

I usually pipe frosting for neat swirls but a spoon works just fine. Press the pretzels and candies gently but firmly so they stay put.
