I am totally in love with this Blue Rudolph Rapture Crepe. It’s basically a festive burst of holiday joy right on your plate.
That bright blue color always makes me think of a clear winter night and the blueberry vanilla filling is sweet, creamy, and just insanely comforting.
I have made these for Christmas brunches, desserts, or just when I need a little cozy holiday treat for myself.
Honestly, making them is like a fun little kitchen adventure, and every single time they turn out looking way fancier than I expected.

1 cup all-purpose flour

Why I Love These Ingredients
The flour makes soft, pliable crepes, and milk keeps the batter super smooth. Eggs give the crepes structure and richness so they are tender but don’t fall apart.
Sugar and vanilla add sweetness and warmth and butter gives that rich, buttery flavor. Blue food coloring makes the crepes pop with a festive Rudolph vibe.
Cream cheese makes the filling tangy and creamy, powdered sugar sweetens it without any graininess, and blueberry puree is like a fruity burst in every bite.
Heavy cream keeps it light and fluffy. Topping with whipped cream and blueberries just makes them feel extra festive.

Making the Crepes
I start by whisking together the flour, milk, eggs, sugar, melted butter, vanilla, and salt in a big mixing bowl. I stir until smooth and lump free.
If I am in a hurry, I just throw it in a blender and it’s done in a flash.
Then I add 4 or 5 drops of blue food coloring until it turns this gorgeous bright blue.

I usually cover the bowl and let it chill in the fridge for 10 minutes so the crepes end up tender and easy to flip.
Making the Filling
While the batter rests, I puree about 3/4 cup of fresh blueberries in a blender to make 1/2 cup of puree.
In another bowl, I beat the softened cream cheese with powdered sugar until smooth, then mix in the blueberry puree, vanilla, and heavy cream until the filling is creamy and dreamy.

Honestly, it smells like dessert heaven.
Cooking the Crepes
I heat a non-stick skillet over medium heat and add a little butter. When it’s hot, I pour in about 1/4 cup of batter and swirl it around into a thin circle.
I cook for 1 to 2 minutes until the edges lift slightly and the bottom is lightly golden, then flip it and cook for another 30 seconds.

I stack them on a plate as I go and usually get about 8 crepes.
Assembling the Crepes
I spread about 2 tablespoons of the blueberry-vanilla filling on each crepe.
Then I fold it in half and again to form a triangle, or sometimes I just roll it up if I am feeling fun.

I do this for all the crepes and it already looks kind of magical.
Adding Toppings
Next I dollop some whipped cream on top, sometimes piping a swirl if I am feeling fancy.

I throw a few fresh blueberries on each crepe and if I am really going all out I sprinkle a little edible silver stars or sprinkles for that Rudolph sparkle.
Serving and Enjoying
I serve these warm right from the skillet to really enjoy all that creamy blueberry filling and soft, tender crepe.

They are perfect for a holiday breakfast, brunch, or dessert. Pair with a vanilla latte or a blueberry smoothie and suddenly it feels like a Christmas café in my kitchen.
Leftovers if Any
If there are leftovers, which is rare because they are so good, I store the crepes and filling separately in airtight containers in the fridge for up to 3 days.
I reheat the crepes in a skillet over low heat for about 30 seconds per side to keep them soft.
The filling is fine cold or at room temperature.
I don’t usually freeze the assembled crepes because the filling can get soggy but plain crepes freeze well for up to a month if you layer them with parchment paper in a freezer bag.

I always let the batter rest for 10 minutes because it makes flipping crepes way easier.
Add the food coloring slowly until you get the shade you want.
Non-stick skillet is a must, it just makes everything effortless.
If the batter seems thick, a splash of milk thins it and makes those delicate crepes.
You can prep the batter and filling a day ahead and save yourself some holiday morning stress.
