2 big chicken breasts no bone or skin
1 head of broccoli made into small bits
2 tbsps olive oil (use the good type)

1 cup grated Parmesan cheese (get it fresh trust me)
1/2 cup shredded mozzarella cheese (for that melty touch)
Salt and pepper (keep it easy)

How To Make Chicken Broccoli Alfredo Keto (No tough steps just cook)
Step 1 Cook the Chicken
Warm up 1 tbsp of olive oil in a big pan over medium heat.
While it heats season your chicken on both sides with salt and pepper. When your oil’s hot put the chicken in.
Cook about 5 to 7 mins on each side till they’re golden and done.
Don’t speed this up you want the crust.
When done let them rest a bit (keeps ‘em juicy). Then cut into strips or small bits.

Tip Don’t poke the chicken too much. Let it stay juicy. If you overcook often use a meat thermometer 165°F is your goal.
Step 2 Fry the Broccoli

Use the same pan (keep the flavor) add one more tbsp of olive oil.
Toss in your broccoli and fry for 3 4 mins. They should be bright green and firm but a bit soft. No one likes soft broccoli right? When ready set them aside.
Note If you like softer broccoli cook a bit more. If you get sidetracked (we all do) just keep an eye on it.
Step 3 Make That Creamy Alfredo Sauce

Back in the pan add your chopped garlic. Fry it for about a minute till it smells wonderful. But watch out don’t let it burn or it’ll taste bad.
Pour in the heavy cream and let it simmer. Keep stirring so it doesn’t stick.
Once it bubbles a bit turn the heat down to low and mix in your Parmesan and mozzarella. Let it melt and thicken into a creamy sauce.
Season with salt pepper and maybe some red pepper flakes for heat.
Step 4 Mix It All

Now add your cooked chicken and broccoli back to the pan. Stir it all so the flavors mix and the sauce covers everything. Let it heat for a few more mins so it’s warm all around.
