I love sweet Candied Pecan Nuts. They are just right. Sweet & crisp. Not too much. The sugar heats the nuts. The spice makes it smell homey.
The pecans are rich & soft. Take one bite & you feel a small treat. I make them for a snack. Or to add to food & sweets. I might whip some up after dinner.
Then stash some for later.
I first made these in the mood for quick & wow. I had pecans, sugar, water, a bit of butter, & the spice & vanilla. I thought, why not?
Let’s see. When done, my place smelled like a bake shop. The pecans were just right. Crisp, warm, sweet, & a bit spicy.
Since then, they are my top pick. For guests or late snacks when no one sees
You will need for the Candied Pecan Nuts:

2 cups pecan halves
1 half cup sugar
1 quarter cup water
1 quarter teaspoon spice (can skip)
1 quarter teaspoon salt
1 half teaspoon vanilla
1 tablespoon butter
Why these are great:
Pecans have good fats & stuff for your heart.
They have stuff like vitamin E & more to help bones & health. Sugar makes them sweet & crisp. But eat it not too much.
Water turns sugar to syrup on each pecan. Spice makes it warm & good.
It can help with blood sugar. Salt cuts the sweet & ups the taste. Vanilla makes it smell rich & can lift your mood. Butter makes it smooth & rich & adds good fats.
To make Candied Pecan Nuts:
First, warm the oven to 350 degrees Fahrenheit.
Line a tray with paper. In a pot, mix the sugar, water, spice, & salt on mid heat.

Stir ’til the sugar melts. Add the butter & vanilla. Stir ’til smooth.

Toss the pecans in the syrup. Lay the pecans on the tray. Bake 15 to 20 mins.

Stir every 5 mins to keep from burning. When gold, take out & let cool.

They will crisp as they set.
To serve candied pecans:
Snack: put them in small bowls. Salads: drop them on greens with cheese & dressing.
Desserts: they are great on ice cream, yogurt, or cakes. Trail mix: mix with dried fruit & other nuts. Boards: add with cheese, fruit & crackers.
To store leftovers:
Let them cool all the way to stay crisp. Put in a tight bag or box. They stay good at room temp for a week or two. For long keep, freeze up to three months.
Pro tips for candied pecans:
Stir a lot while baking to cook right & no burn.
Watch them, they brown fast. Use new pecans for best taste. Add a dash of hot spice if you like. Mix in other nuts if you want.
Don’t miss out on the butter. It’s key for taste & coat. Cool on paper to not stick. Box in jars with a bow for gifts that wow.
