I seriously adore this Barfi Fudge Pistachio Cardamom Dump Cake.

It hits that sweet spot between my love for Indian desserts and the crazy easy magic of a dump cake.

The pistachios give it this buttery crunch, cardamom adds a warm, floral note that makes me feel cozy, and the fudge-like texture just feels indulgent yet comforting.

I have made this a bunch of times, and every time I serve it my friends and family cannot stop raving.

It feels fancy without me having to spend hours in the kitchen and honestly it just makes me happy.

Ingredients

ing 9

1 box 15.25 oz white cake mix
1 cup shelled pistachios, finely chopped
1/2 cup sweetened condensed milk
1/2 cup whole milk
1/2 cup unsalted butter, melted
1/2 cup heavy cream
1/2 cup khoya, crumbled (or ricotta cheese if you cannot find it)
1 teaspoon ground cardamom
1/2 teaspoon vanilla extract
1/4 cup sugar
1/4 teaspoon saffron strands, optional
1/4 cup slivered pistachios for garnish

Why I Love These Ingredients

The white cake mix gives the cake a soft, fluffy base and makes my life easier.

Pistachios are my favorite because they add nutty flavor and crunch.

Sweetened condensed milk gives it that fudgy, creamy feel like barfi, and the milk and cream help everything blend into smooth perfection.

Khoya is my goto for authentic Indian richness, but ricotta works in a pinch.

Cardamom adds that warm, slightly sweet floral aroma that makes me feel like I am at a festive celebration.

A little vanilla rounds it all out, sugar sweetens just enough, saffron is optional but makes it feel extra special, and slivered pistachios on top are the finishing touch.

Benefits

Pistachios are packed with protein and healthy fats, good for the heart and give that satisfying crunch.

Dairy adds calcium and vitamin D to keep bones strong.

Khoya gives protein and traditional richness, cardamom is great for digestion, saffron can improve mood, and butter adds richness and vitamin A in moderation.

How I Make It

First, I preheat my oven to 350°F so it is ready when I am done mixing everything. I grease my 9×13-inch dish with a little butter to keep it from sticking.

pls

In a large bowl, I mix sweetened condensed milk, whole milk, heavy cream, melted butter, and vanilla until it looks smooth and creamy.

Then I crumble in the khoya and stir it in until mostly dissolved.

pks

I add the cardamom and sugar, and if I am using saffron I soak it in a tablespoon of warm milk for a few minutes and stir it in.

fe 1

Next I fold in the finely chopped pistachios so they are evenly distributed.

up

I sprinkle the white cake mix over the bottom of my dish. This is the fun part of a dump cake, no mixing required.

I pour the wet mixture over the top, let it soak in, and do not stir.

efe

I sprinkle the slivered pistachios on top to make it look pretty and add a little extra crunch.

fd 1

I bake it for 35 to 40 minutes until the top is golden and a toothpick comes out clean. I let it cool for about 10 minutes before digging in.

mk

Honestly, it smells amazing while baking and the cardamom just makes me want to eat it straight from the oven.

Serving Ideas

pdsp

I usually serve this warm, scooped into bowls with a dollop of whipped cream or a scoop of vanilla ice cream.

Sometimes I drizzle a little rose syrup or sprinkle edible rose petals for a fancy touch. It is perfect after an Indian meal or as a sweet treat with chai tea.

If I want it to look nice for guests, I cut it into squares and sprinkle extra pistachios on top.

Leftovers

pds

If I am lucky enough to have leftovers, I store them in an airtight container in the fridge for up to five days.

To reheat, I microwave a portion for 15 to 20 seconds or warm it in the oven at 300°F for 10 minutes.

The cake stays moist and flavorful, and the pistachios keep their crunch.

Tips I Love

If you cannot find khoya, ricotta works well, just use a little less sugar because it is not as sweet.

I like to lightly toast the pistachios before chopping to deepen the flavor.

Soaking saffron in warm milk for a few minutes really brings out its color and aroma.

I spread the cake mix evenly to avoid clumps, and if the top browns too fast I just cover it with foil for the last 10 minutes.
