8 oz fettuccine pasta (or whatever you want penne, linguine, all good!)

1/2 cup grated Parmesan cheese
Parmesan adds that salty, nutty taste. It also has protein & calcium.

1/2 tsp garlic powder
Gives a good gentle garlic hit without the need to chop.

Salt & pepper to taste
Because flavor is key.

Fresh parsley for garnish (optional)
Just to make it look nice & add a fresh taste.

  1. Cook the pasta
    Boil a big pot of salted water & cook your pasta until it’s just right tender but with a bit of bite. Drain it, but keep about a half cup of the pasta water (trust me here).

    In a large pan, melt the butter over medium heat. When it’s all melted and smells great, add in the heavy cream & the softened cream cheese. Mix it well until the cream cheese melts & the sauce is smooth & lush. (If you see small lumps, just keep mixing they tend to go away!)

    Put in your Parmesan & garlic powder, & mix until the cheese melts & the sauce looks creamy & dreamy. If it’s a bit thick, add some of that saved pasta water a bit at a time this helps the sauce mix well & stick to your pasta.

    Taste it & add salt & pepper as you like. Don’t skip this seasoning lifts it all up.

    Mix the pasta in the sauce. Really mix it so each bit gets covered in that cheesy, creamy mix.
